Analysis of volatiles was performed according to the method of
Thuwapanichayanan et al. (2011). The volatile components of fresh
and foamed bananas as well as those of dried banana foams were
isolated by solid phase micro extraction; fresh and foamed bananas
with a mass of 4 g and dried banana foams with a mass of 1 g were
used for extraction. The sample with a mass of 4 g was filled up
with 6 ml of distilledwater, while the sample with a mass of 1 gwas
filled up with 9 ml of distilled water. 0.2 mL of internal standard,
which is caproic acid ethyl ester methanolic solution (1 mL/L
methanol), was added to those samples. Analysis of the extracted
volatile compounds was performed by a HewlettePackard 5973
mass spectrometer with electronic impact (EI) 70 eV quadripolar
filter; the volatiles were identified by comparing the obtained
spectra with those stored in a data bank. Quantification of the
volatiles was carried out using a HewlettePackard 6890 gas chromatograph
(GC). An HP5 column (30 m length, 0.25 mm diameter,
0.25 mm thickness) was used. All analyses were performed in
duplicate.
