The U.S. Centers for Disease Control and Prevention report
approximately 40,000 culture-confirmed cases of salmonellosis
each year in the United States, which result in approximately
400 deaths (5). Many Salmonella outbreaks are associated with
meat and poultry (20), with contamination usually resulting
from the carcass coming into contact with the feces of a Salmonella-
infected animal during processing (22).
