Statistical Analysis. The experiment was performed in a completely randomized design to determine the influence that the factors had on the changes to the oils heated at high temperatures. The experiment was carried out in a 4 * 3 factorial scheme, with four treatments (SO, TBHQ, RE and RE + TBHQ) and three heating times (0, 10 and 20 h). The results obtained in duplicate from total polar compounds, oxidative stability, tocopherols and fatty acid profile were evaluated using the analysis of variance and the Tukey’s test for the 5% significance level, both of which were performed with the ESTAT program, version 2.0
