Butter A natural product made by churning cream, butter has an 80 per cent fat content, which is saturated fat. Butter is made in two basic types, sweetcream and lactic, and both are available salted, lightly salted or unsalted. The choice will depend largely on flavour, according to whether you are making a sweet or savour sauce. There are other alternative however. Clarified butter ghee or concentrated butters, which can be made at home, will withstand higher temperatures than untreated butter, and will not burn as easily.
