VITAMIN A
Vitamin A is an essential nutrient for maintaining
healthy vision, skin, growth, mucous
membranes, immune function and reproduction.
There is a common misconception
(propagated by proponents of plant-based
diets) that we can get all the vitamin A that we
need from beta-carotene rich foods such as
carrots or sweet potatoes.
The research however, contradicts this
assumption by showing that only a small
fraction of beta-carotene is converted into
active vitamin A in the form of retinol needed
for bodily functions.
