with sunflower seed and barley flour would meet about 18–49% of
DRIs for Se in both white and wholegrain types of cookies. This
observation is interesting because it suggests that these products
have great potential to become important natural sources of Se,
easily available to the general population. Se is known to have an
important protective role in the prevention and suppression of
many disorders, e.g. carcinomas, cardiovascular diseases and fibrosis.
It is even considered to be an antioxidant and ‘‘anti-ageing”
micronutrient (Stranges et al., 2006).
