Raw material
The experiments were carried out with strawberries (var. Cam- arosa), which were bought in a local market. Fruits were chosen according to their similarity of colour, size, ripeness and absence of surface defects. Strawberries without stalk were immersed in a solution of 0.1% sodium hypochlorite for 1 min before treat- ments. Then they were blotted and cut in halves for the different treatments.
