The percentage of total lipid consisting of PUFA, MUFA and SFA in lake whitefish was very similar to that found in the cold-adapted turbot, which have eggs containing a single large oil globule (Silversand et al., 1996). Oil globules are principally neutral lipid, which is rich in MUFA (Eldridge et al., 1983; Wiegand, 1996; Tocher, 2003). Thus, the oil globules probably contribute to the relatively high MUFA levels (~32%) of lake whitefish eggs.
