The objectiveofthecurrentstudyistoexamineexperimentallythethin-layerdrying
behavior ofquinceslicesasafunctionofdryingconditions.Inalaboratorythermal
convectivedryer,experimentswereconductedatairtemperaturesof40,50and60 1C and
averageairvelocitiesof1,2and3ms1. Increasingtemperatureandvelocityresultedtoa
decrease ofthetotaltimeofdrying.Theexperimentaldataintermsofmoistureratiowere
fitted withthreestate-of-the-artthin-layerdryingmodels.Intherangesmeasured,the
valuesoftheeffectivemoisturediffusivity(Deff) wereobtainedbetween2.671010 and
8.171010 m2 s1. Theactivationenergy(Eα) variedbetween36.99and42.59kJmol1.
