Wine making process has a straightforward influence on wine quality. This process can be divided into five basic steps,
i.e., harvesting, crushing and pressing, fermentation, clarification, and aging and bottling. As soon as grapes have been harvested,
separating stems from grapes and crushing grapes are necessary [28]. Especially, fermentation is closely related to
wine physicochemical indexes.
In this section, a numerical example is presented to illustrate the proposed combination method. Then the proposed
methods of wine quality evaluation are described in details. The prediction ability of different methods are compared thoroughly.
In order to illustrate the strategy of the proposed multivariate statistical combination forecasting method, we show
in Fig. 1 how to select the best method.
