Chop the biga and soaker into 12 pieces of the same size springkle the pieces with a little flour if
needed.
Combine soaker and biga pieces in the bowl and add the rest of the ingredients, knead until smooth.
Cover loosely with plastic wrap and let rise at room temperature for 60 minutes.
Divide in to 2 and shape into two loafs. Place dough in a well-greased 8 ½ aby 4 inch bread pan let
rise for at least 1 hour.
Preheat oven at 170 Celsius bake for 20 minutes and cover with foil and bake for another 30 minutes.
Bread is done with the internal temperature registers at 195F in the center
