3.5. Sensory evaluation
Panelists gave overall scores ranging between 4 (satisfactory)
and 5 (good) (Table 8) for the IM pineapple slices, with no statistical
significant differences due to storage days or radiation doses. In
general, but not significantly, appearance and colour had higher
scores than texture, aroma, taste and overall acceptability. The
1 kGy sample, on day 1, had the lowest scores in texture, aroma,
taste and overall acceptability; this was not observed on the
following storage days. For many of these parameters a minor,
though not significant, decrease in average scores was observed
during storage. These findings are in agreement with those of
Hajare et al. (2006), who also reported no significant effect of 2 kGy
radiation dose on sensory parameters of minimally processed
pineapple slices when stored at 10 C for 12 days.
