NUTRITION RISK ASSESSMENT
Participants were asked nutrition-related questions regarding frequency of
eating meals alone (all of the time, most of the time, some of the time,
never), the ability to prepare food using fresh ingredients (yes versus
no), oral health (‘‘How do you describe the condition of your mouth and
teeth?’’; excellent, very good, good, fair, or poor), and appetite (‘‘How do
you rate your appetite?’’; excellent, very good, good, fair, or poor). Eating
meals alone was dichotomized as all or most of the time versus some of the
time or never. Responses to oral health and appetite were dichotomized as
excellent, very good, or good versus fair or poor. Food-related anxiety was
evaluated based on a yes or no response to the question: ‘‘While at the hospital,
were you worried about getting enough food to eat when you
returned home?’
