Processing of virgin coconut oil is carried out under more controlled conditions using fresh dried pulverized coconut kernels compared to traditional coconut oil extraction process using copra (dried kernel using smoke drying or sun drying). Disintegrated pulverized kernels are dried at 70 °C to minimise chemical changes and then virgin coconut oil extraction carried out using cold press at 65 °C. This process gives colourless coconut oil and cream colour residue (poonac). Although this is similar to the residue left in copra milling in chemical composition, it is free from chemical, microbiological and physical contaminants which occur due to poor handling and therefore suitable for human consumption. The studies on use of the residue obtained from coconut oil production as a source of dietary fibre were scanty.
