The selected additives in this study effectively improved cooking
yield comparing with the control samples (P < 0.05, Table 5). Among
these additives, cooking yield in ground pork patties with the addition
of GRF was higher than that from treatments of CS and PS while it was
lower than that of CAR group (P < 0.05). Vittadini, Rinaldi, Chiavaro,
Barbanti, and Massini (2005) suggested that the cooking yield
depended on numerous different variables including product
composition, additives, processing manners, cooking methods and
time, oven temperature and sample dimensions. Cooking yield was
mainly affected by water and fat retention capability and the mass
transfer during thermal processing also influenced the cooking yield
substantially. In this study, the CAR and GRF samples had higher
cooking yield among the samples with additives. However, there were
no significant differences in cooking yield between GRF and SPI samples
and between CS and PS samples (P > 0.05). It can be concluded
that GRF had the similar cooking yield to SPI in ground pork patties,
while it was higher than common starches including CS and PS.
