DEFINITION
This method determines all substances, in terms of milliequivalents of peroxide per 1000 grams of test sample, that oxidize potassium iodide under the conditions of the test. The substances are generally assumed to be peroxides or other similar products of fat oxidation.
SCOPE
Applicable to all normal fats and oils, including margarine. This method is highly empirical, and any variation in the test procedure may result in erratic results. This method gives erratic results at peroxide values =70.
