Most quality characteristics decreased when the temperature
was shifted from 20 to 30 8C for 2 to 11 days, the longer the
period was, the more the characteristics were reduced (Table 3).
Skin discs changed to 30 8C for only 2 days had the highest
starch, TPC and SP concentrations, while discs changed for 5
days had the highest weight and diameter. Both the 2- and 5-day
treatments had the highest anthocyanin, SSC and SS readings.
Free amino acids concentrations decreased after treatment
(Table 3).
