3. Results and discussion
3.1. Trained sensory panel
Significance of main effects, breed and ageing, on sensory attributes is shown in Table 3. Ageing time was the most important factor in most of the sensory descriptors used, as also found by Miller et al. (1997). The breed effect was only significant for tenderness (p < 0.001) and residue (p < 0.01). There was a significant interaction between ageing time and breed for tenderness.
