Total solids, total sugars, reducing sugars, tannins
and specific gravity were measured by the previously
described procedures (AOAC 2000).For cloud stability,
samples were centrifuged at 4,500 g for 15 min and the
cloud stability of the centrifuged samples (expressed in
terms of % light transmission) was determined at 660 nm
(Versteeg et al. 1980).
