Sensory test of the degree of browning peel browning was conducted
by 30 panellists who study Food Science and Technology at
Kyungpook National University. The panellists were trained using
the banana colour chart (Isopan Insulation Pvt. Ltd., Gurgaon,
India) and evaluated banana peel browning (particularly black
spots and colour changes from green to yellow) using a 9-point
scale ranging from 1 (least browned) to 9 (most browned).
