3.3. Kinetic stability
The stability of the emulsions was observed for 14 days. Most emulsions destabilized only through sedimentation mechanism. However, lecithin formulations with high water content showed aqueous phase separation, resulting in a three-phase system. The appearance of the emulsion and the sedimentation index (SI) and aqueous phase separation at the equilibrium are presented in Table 1.
