Water Activity (a_w) of osmotic dehydrated purple sweet potato that infused with CaCl2 is shown in Figure 3. a_w was decreased when concentration of sucrose and CaCl2 were increased. The lowest a_w (0.9531) found in the potato samples, which were treated with 60% sucrose solution that infused with 4% CaCl2. The highest a_w found in the potato samples that treated with 40 and 50% sucrose solution and infused with 0% CaCl2 and the values were 0.9706 and 0.9649, respectively. The sucrose solutions, which were without the CaCl2 infusion was unable to maintained the lower a_w.
