compounds. Activity of predominant honey sugars, fructose,
glucose and maltose, were found to be three orders of magnitude
lower than tested flavonoids. Non-reducing sugars, such as
sucrose, do not have HPS activity. The contribution of an artificial
honey solution, containing predominant sugars in honey, to the
total honey AO activity has been previously reported indicating
values lower than those determined in the honey samples
