Slicing of apples exposes the skinless tissue to an environment with
lower relative humidity, and causes substantial weight loss. A large
increase in water loss occurred with uncoated control apples after slicing,
as shown in Fig. 4. After 2 days of storage, control apples lost around 19%
of their weight, while coated apples lost 15% of their weight (pb0.05).
Chitosan coatings on apple slices did not prove to work effectively as
water vapor barriers during the entire storage period (Fig. 4).
