Comparing the present sulfite content to the sulfite limits established by Codex Alimentarius Commission (FAO/WHO, 1995) for different food categories, the rice treated with up
to 0.6% sodium bisulfite, which presented 88.2 mg/100 g, had a lower value than the limits established for dried fruits of 100.0 mg/ 100 g, but higher than the limits established for dried vegetables of 50 mg/100 g.
