The aim of the current work was to further extend the application
of SPE for the purification of anthocyanins from different berries
and to investigate the antioxidant properties of the
anthocyanin-rich extracts. The antioxidant activity of the extracts
obtained was evaluated by determining their oxygen radical
absorption capacity (ORAC), hydroxyl radical averting capacity
(HORAC), total peroxyl radical trapping antioxidant parameter
(TRAP), scavenging of nitric oxide (NO) and inhibition of lipid peroxidation.
The methods chosen embrace different aspects of the
antioxidant action and give a comprehensive picture about the
antioxidant potential of the extracts produced.
