Shrimp and Pineapple Dipping Sauce
I really like serving this dipping sauce with grilled or fried seafood or crunchy raw vegetables. It is very similar to dips I've tried along the coast of southern Thailand, but this specific recipe comes from Nha Trang on Vietnam's central coast. This region is known for its fresh seafood, especially crustaceans, which is fortuitous as I love to serve this sauce with simple barbecued prawns; The smokiness of the prawns and nutty, intense flavour of the shrimp paste and pineapple are just made for each other. It's fantastic with betel leaves with beef and water Chestnuts
