Chips production
Keitt mango fruits were washed, peeled and sliced into slices (2cm x 4cm x 0.5cm) and spread evenly on trays lined with aluminum foil. Trays were then placed in a Wagtech oven (Model GP120SSE300HYD, Wagtech International Ltd, USA) at a temperature of 40°C for 18 hours. The slices were turned every 2 hours to ensure uniform drying. The dried slices were allowed to cool for about 30 minutes in a dessicator prior to analysis [9].
