Phenolics are substrates of peroxidases (EC number 1.11.1.x), a class of enzymes that uses a hydroperoxide, in most instances H2O2, and an organic substrate as electron donor, to achieve an electron transfer (Poulos, 2010). When the electron donor is a phenol or a phenolic derivative, phenoxyl radicals are formed and dimerisation occurs in the solution phase. If the reaction is carried out in water, the dimmers, trimmers, or oligomers rapidly reach their saturation concentration and precipitate out. By adding small volumes of an organic solvent miscible with water (MeOH, EtOH, DMF, etc.) or surfactants, it is possible to maintain the oligomer in the solution phase and to grow up to a thousand kDa molecular weight, in a biomimetic fashion resembling lignin biosynthesis.
