Color change of osmotic dehydrated purple sweet potatoes that infused with CaCl2 has shown in Figure 5. Overall, a decreased trend of color was found in osmotic dehydrated purple sweet potatoes that infused with CaCl2. Lightness values of potatoes were tend to increased was found in the potato samples storage at 4˚C. On the other level, Hue and chroma (H*, C*) values of potatoes were tend to color decreased. Color shown significant changes after different temperature storage in potatoes. Osmotic dehydrated purple sweet potato that infused with CaCl2 can be stored for a period of 25 days (4C). In storage at room temperature, can be studied in a 10-day period due to the growth of microorganisms in samples of sweet potato.
