3.3. Effect of amino acid supplementation on gene expression levels
The expression of 15 genes involved in the synthesis of flavouractive
compounds was quantified in all fermentations (Figs. 3B and
5B). Under our fermentation conditions, we observed significant
upregulation or downregulation of genes involved in the biosynthesis
of higher alcohols, encoding transaminases (BAT1 and BAT2),
decarboxylases (PDC1, PDC5, PDC6 and ARO10) and alcohol dehydrogenase
(ADH1), (Fig. 3B). The expression of the genes for the
