2.4. Determination of radical scavenging capacity against DPPH
The AO activity of honey samples was assessed using DPPH
assay (Sanchez-Moreno et al., 1998). All honeys were dissolved in
distilled water to obtain the concentration of 1 g/mL. Volumes of
200 mL of honey solutions were mixed with 1800 mL of methanol
solution of DPPH (0.04 mg/mL) and left to stand to react in the dark
at room temperature for 30 min. After incubation, the absorbance
of the reaction mixture was measured at 517 nm. The DPPH
scavenging activity was calculated using the following equation:
