Only 12 anthocyanins (Table 6) were identified by LC–MS based on fragmentation patterns of individual peaks and past studies (Kim et al., 2012; Lee et al., 2013). Peonidin-3-sophoroside-5-glucoside and cyani din-3-sophoroside-5-glucoside represented 7.9–13.4% of the total anthocyanins and were identified as the basic structure of other acylated anthocyanins.
