To evaluate the effect of pH and temperature during volatile
release, 13 mg of curuba glycosides were dissolved in 5 mL of citric
acid-phosphate buffer solution (pH 3.3, 0.1 M) and placed in a sealed
ampoule for 2 h at 100 C. The volatile products were extracted with
ethyl ether, dried over anhydroussodium sulphate and concentrated
to 1 mL by using nitrogen, and then analysed by GC–MS.
