Sweet tamarind (Tamarindus indica L.) is one of the most popular
fruit varieties in Thailand. The fruit, which is actually a pod, is
harvested ripe and consumed fresh. Sweet tamarind has low water
content and is high in phosphorus, potassium, thiamin, and niacine
(Gunasena and Hughes, 2000). The two most popular cultivars are
known locally as ‘‘Sitong” and ‘‘Srichompoo”.
