We tested the hypothesis that the deeper yellow color of the pulp of cv. Chanee was due to a higher concentration of carotenoids, in particular a-carotene and b-carotene. This hypothesis is supported by the data. Cv. Chanee contained much higher total carotenoid concentrations, as well as b-carotene and a-carotene concentrations, than cv. Monthong, both during growth and during the postharvest phase. Data from the literature suggests the hypothesis that durian carotenoid intake in humans might be high because durian contains relatively high fat concentrations. Additionally, if nutrition with b-carotene and a-carotene is sought, it seems better to consume cv. Chanee than cv. Monthong.
