Reducing power of rice bran was measured according to the method of Oyaizu (1986). A 1 mL sample was mixed with 2.5 mL 0.2 M sodium phosphate buffer (pH 6.6) and 2.5 mL 1% K2Fe(CN)6. The mixture was then incubated at 50 ◦C for 20 min. A 2.5 mL 10% trichloroacetic acid was added to the mixture,and centrifuged at 2200 g for 5 min.A 2.5mL upper solution was mixed with 5.0 mL distilled water and 0.5 mL 0.1% FeCl3. The absorbance was measured at700nm using spectrophotometer and BHT was used for comparison.
