As well as in oregano, the phenolic compounds
thymol and carvacrol are the main compounds of
thyme extracts. Researches, over thyme essential oil,
highlight the moderated inhibition of LDL oxidation
(20-27%) (Rani et al., 2013). Thus, this study aimed
to evaluate the antioxidant and hypolipemiant effect
of oregano and thyme oleoresins, under the lipid
profile and oxidation of the LDL fraction in vivo.
