Fig. 8.A2, B2 and C2 show the
indexed images for the same samples obtained for the loin eye alone.
Accordingly, sample 8A was classified as PSE, sample 8B as RFN, and
sample 8C as DFD. Detailed observation of these samples show that
there are regions of different classes in certain parts of the loin eye,
but these regions are small compared to the larger regions which
determined the sample class. The regions in the edge of the sample are
not flat, so the light was not reflected in the same way as the major
portions of the samples. This caused some scattered pixels which
could be observed during the ROI selection, and affected the score
images as it appears in different colors. This can also be seen in the PSE
sample, with the edge containing portions in blue color. Although
these effects did not affect the classification performance, an
improvement in sample illumination may potentially reduce the
scattered pixels arising from shading and the boundary regions. The
overall correct classification for this model was 96%. All the steps
