From the Atlantic to the Baltic, herring is taken for granted and hoarded by those selfish Swedes. No more! This persnickety little bait fish is cheap and an abundant source of oil, omega-3, and vitamin D. Expect to see high-end versions of traditional German rollmops and Jamaican Solomon Gundy, and smoked herring, pickled herring, and schmaltz herring taking over for ordinary salmon and run-of-the-mill trout. McDonald's will be introducing kippers to its breakfast menu in select cities.
