2.1.3. Second chilling stage
After 24 h of chilling, the film was removed, and the half carcasses
from both groups were sawed into three primary cuts according to Brazilian specifications.
The primary cuts were sent to a second chamber
where they were chilled without film for a period from 24 to 96 h.
