2.6. Sensory evaluation
Effervescent agent was found to be the most effective disintegrant
for fast dissolution. Hence, mixed fruit tablets containing different concentrations of effervescent agent were used for dissolution and sensory
evaluation tests. The experiments were also carried out for individual
fruit tablets with the highest concentration of effervescent agent. Formulation of the sensory tablets was modified by adding 1% citric acid
to the original ingredients. Twenty pieces of tablets (2 g each) were produced for sensory evaluation and each of five tablets was dissolved separately in equal amounts (500 mL) of fresh water, and 10, 20 and 30%
sugar solution, respectively. The finished products were subjected to
sensory evaluation by a tasting panel containing 10 untrained judges.
The panelists were asked to indicate their preference for each sample
based on quality attributes, including taste, smell, color and sweetness.
Hedonic rating test on a hedonic scale from 0 to 9 point was supplied to
the panelists to rate the samples. The responses of the panelists were
compiled, analyzed and presented graphically as well as in table form.
