The water extraction method was similar to the acid extraction method, except that purified water, obtained by reverse osmosis (RO), was used instead of the CA solution. The extraction was carried out in a 25 °C water bath for 30 min with a puree to water ratio of 1:4 (w/v) (i.e. 200 g of puree mixed with 800 mL of RO water). The pH values of the mixtures were 3.60 ± 0.01 for MHF and 3.50 ± 0.01 for EHF. Ethanol precipitation and purification were carried out based on the procedures described earlier for the acid extraction method.
