A hedonic test was conducted with 40 assessors who scored the acceptability of various attributes using the following 1–8 point scale (1: extremely acceptable and 8 extremely unacceptable) in 5 lasagne categories (HPP0: lasagne treated at 600 MPa for 1 min at day 0, HPP28: lasagne treated at 600 MPa for 1 min at day 28, HPP56: lasagne treated at 600MPa for 1min at day 56, C0: non-treated lasagne at day 0, C28: non-treated lasagne at day 28).
