Photographs of transversal and longitudinal sections of the
different muffin formulations are shown in Fig. 1. The longitudinal
section reveals the presence of tunnels (or diffusion pathways),
which progressively diminished upon higher sucrose replacement.
The lack of diffusion pathways as the sucrose was replaced may be
associated with the earlier thermosetting, not allowing enough
time for bubble expansion and the formation of diffusion pathways.
