In many cases in which small particle size positively correlated
with high sugar yield, the following conclusions were drawn: small
particles have large surface area, and large surface area produce
high sugar yield (Fan et al., 1981). Sugar yield should be expected
to be a function of the surface area of cellulosic biomass because
direct physical contact between cellulose and enzymes is a prerequisite
for conversion of cellulose to glucose (Klyosov et al., 1986).
