1. Introduction
Hazelnut is a popular nut tree worldwide.Although its production ranged from Turkey to some areas of the United States (Oregon and Washington),Turkey dominates hazelnut industry by contributing 83% of total world’s production and supplying 80% of global hazelnut exports.
Hazelnut is one of the most important raw materials for the pastry and chocolate industry due to its organoleptic characteristics. In addition, hazelnuts add texture to bakery, confectionery, cereal, dairy, salad, sauce and dessert formulation. Furthermore, hazelnuts contribute to human
nutrition and health due to their protein (12–19% (w/w), oil, vitamin
and mineral contents.
