Sorghum flour was prepared from decorticated sorghum grains by wet milling method and then
it was ground and passed through 100 mesh sieve.
Pregelatinized modified sorghum flour was prepared by using double drum dryer. The 20%
sorghum flour suspension was fed onto drum dryer and the conditions were set to have 130o
C (drum
surface) with 0.35 mm gap. Then the pregelatinized sorghum flour was ground and passed through
100 mesh sieve.
Chemical composition
The moisture, protein, lipid, ash and fiber contents of flours were determined according to
AOAC (2000). All measurements were carried out in triplicate.
