Salep-milk mixtures were prepared by adding 0.75 %,1.00 %, and 1.25 % (w/v) of ground salep in sterilized milkat room temperature. The samples were heated until 85 °C andkept for 2 min at this temperature. Prior to flow propertymeasurement, the temperature of each mixture was decreasedto 45, 50, 55, 60, or 65 °C.
