The reaction was terminated by the addition of 1 mL
of 3,5-dinitrosalicylic acid (DNS) reagent and the liberated reducing
sugars were estimated colorimetrically according to the
method of Miller (1959). One unit of amylase activity was defined
as the amount of enzyme releasing 1 lmol of reducing sugars
(glucose equivalents) per minute at pH 7.0 at 40 C.
